We solved this problem not by carving out time for the family but by integrating ourselves into the life of the restaurant.
Let me explain. Alexia, our eldest daughter, was born in 1996, a year after the opening of Osteria Francescana: she grew up among cooks and in the dining room, as did our son Charlie.

The boys on the team are family to them. By sharing our lives with our employees, we were able to create something special: an extended family.
Who cooks and what?
Massimo, without a doubt. The first thing he made me taste was an artichoke soup when we were working in New York.

Definitely Le cinque stagioni del Parmigiano: it’s a recipe that was born before my very eyes, and Alexia’s favorite as a child.
